The academy is located right in the city center, in a historical courtyard of what we call “Old Milan” (aka pre WWII bombings that annihilated our city), a few shakes away from the Navigli District and the very well known Bocconi University.
Located amongst artist’s ateliers, cool restaurants and amazing cocktail bars (some of which are amongst the world’s best 50 bars), you’ll be learning here, in the middle of it all, breathing in this amazing air filled with passion and ideas. If ever you need time for yourself, to think and take in the city, the Duomo (our Cathedral and city center) is a mere stroll through Milan’s secret streets, cobble roads and many, many ice cream parlours! Most of our partners and teachers are nearby, in the center of Italy’s gastronomical capital.
The professional academy pf haute cuisine is situated in an industrial loft, derived from what used to be a foundry back in the days (late nineteenth century). It maintains of its industrial “vintage” flavour, high ceilings and exposed beams, two professional kitchens with all the best equipment, a big open space that functions as an aula magna as well as a living room, locker room and services.
The kitchens are equipped with all you ca find in professional ones, we also have a beautiful pizza/bakery oven. We don’t have personal placements in the kitchen as in the real world, you’ll never have one so we prepare you to work elbows to elbows with your kitchen mates.
One of our classrooms is indeed a real restaurant, Al Cortile, where students can experience the thrill of real service for the first time.
